Menu Plan Monday – Week of 4/30

Well we did it! Last week’s menu plan was pretty ambitious, and we made just about all of it. I’ve found that just having a plan is the key. If I know ahead of time what I am hoping to accomplish, I’m more likely to get it done.

So here’s the plan for this week.

Breakfasts: My plan includes some low-maintenance breakfasts and some that take more prep. Morning are a little more hurried cooking-wise, so I’m going to try mixing the dry ingredients up the night before for the things that need to be cooked/baked.
Eggs, Toast & Fruit
Strawberry Shortcake Stacked Pancakes
Homemade Chewy Granola Bars (without corn syrup!)
Baked Oatmeal Cups
Smoothies & Toast
Leftover Breakfast Pizza (from a dinner version)

Lunches
Leftovers
Quesadillas
Sandwiches & Fresh Veggies
Loaded Baked Potatoes
Chicken Salad with Tomatoes

Dinners
Stuffed Pepper Casserole
Mini Meatloaves, Mashed Potatoes, Green Beans
Breakfast Pizza – I decided morning was too rushed, so we’ll try it for dinner.
Broiled Salmon (olive oil, salt & pepper), Apple Cinnamon Glazed Sweet Potatoes
Pita Pizzas
Chicken Salads (made with rotisserie chicken)

Menu Plan Monday – Week of 4/23/12

I feel like I’m hitting the reset button this week. I spent some time over the weekend getting back in gear. The kitchen is clean, the grocery shopping is done, the menu plan is made, and homeschool lesson plans are done. I even kept this week’s grocery shopping below $85. That’s been rare around here lately, mostly due to my own disorganization. So we’re starting a fresh week with a fresh menu plan.

Breakfasts

Peanut Butter Banana Sandwiches
Baked Oatmeal with Apples (recipe coming soon)
Breakfast Pizza (Pizza crust with scrambled eggs, cooked sausage, and cheese)
Homemade Bananas & Cream Oatmeal (recipe coming soon)
Eggs, Toast & Fruit

Lunches

Leftovers
Mac & Cheese with Carrot Sticks
Sandwiches with Veggie Plate
Loaded Baked Potatoes

Dinners

Pizza
Crunch Coat Chicken (same as Crunch Coat Fish), Cauliflower, Rice
Crock Pot Black Bean Soup
Turkey Tenderloins, Broccoli, Mashed Potatoes
Broiled Salmon, Baked Yams, Roasted Green Beans (recipe coming soon)
Chicken Parmesan, Salads

It seems a little ambitious, but I’m willing to try! I’ve been cooking more these days, and we seem to be eating healthier. I want to keep that momentum going.

We have a fun week coming up, including Emma’s first trip to the symphony and a visit from my brother’s family. Along with a busy week comes the potential for mealtimes to be chaos. I’ve found that when life gets busy, having a menu plan is a MUST. So here’s what’s on our menu this week.

Menu Plan Monday – Week of 4/2/12

Well, the cupboards are restocked, and the fridge is full. It was QUITE a Kroger shopping trip last week. I was able to make all of last week’s meals from that haul, and I’m planning this week’s menu around it as well. Here’s what’s on the menu.

Menu Plan Monday – The Catch-Up Week

While I’m typing this, we’re in the car heading back from a long weekend vising the in-laws in Kentucky. I’m picturing the fridge at home… the one that we did NOT restock last week, knowing that we would be out of town. There’s not much worse than coming home to spoiled milk. But that means that we MUST go to the grocery store Monday. It also means that the menu plan options are wide open. I’m not trying to use up what we have because I did that last week. :)

Here’s the plan…. And it includes starting the week off with my hubby grilling up a big batch of chicken for us!

Menu Plan Monday – Week of 1/30

It’s birthday week at our house. This sweet little lady is turning SEVEN this week! She had some great ideas for her birthday menu too. So let’s start with that.

Birthday Menu
Breakfast: Fruit & yogurt parfait with strawberries, blueberries & raspberries, topped with homemade granola, served with a side of sausage
Lunch: Homemade Pizza
Dinner: Baked Rotini with Meat Sauce, Breadsticks, and Chocolate Lava Cake

I find the Chocolate Lava Cake funny because she’s never had that dessert. I have no clue how to make it either, so if you have a recipe to share, I’m all ears.
